で、30分でできました 笑 やはりクッキーって、一番早いよね。





早速焼いてみよう ☆


オートミール ズッキーニ クッキー

  • 1と1/2カップ オートミール 粉 (大きめに引いてもいいかも)
  • 1と1/2カップ 大豆粉
  • 小さじ1/2 タンサン
  • 小さじ 1/4 塩
  • 小さじ1 シナモン
  • 小さじ1 ナツメグ
  • 1個 卵
  • 大さじ2 黒砂糖
  • 1/4カップ ココナッツ オイル
  • 小さじ1 バニラエッセンス
  • 2個 バナナ (サイズは中)
  • 1カップ ズッキーニ
  • 2/3カップ 刻んだクルミ


  1. ボールでオートミール粉、大豆粉、塩、タンサン、シナモン、ナツメグを入れて混ぜ合わせる。
  2. 別のボールで卵に黒砂糖を叩き、ココナッツオイル、バニラエッセンス、ほぐしたバナナを入れて合わせる。
  3. 1に2を加え、ズッキーニとクルミを入れてゴムべらなどで混ぜる。生地は少し手に着くくらいの感じ。
  4. アイスクリーム用のスプーンで生地を救い、シリコンマットやクッキングペーパーが敷いた鉄板にボールを作って載せる。上からゴムべらで少し潰す。
  5. 180度に温めておいたオーブンで15〜18分焼く。焼き上がり具合は、クッキーの中心部が少し柔らかいくらい。
  6. ネットで冷ましてからタッパーに入れて冷蔵庫保存




This weekend was hectic as it usually is, so I didn’t have time to stand at kitchen like at all. Which is always a sad thing as I really love my kitchen. And then I was checking my veggies storage shelf in fridge and saw two lonely zucchini. Have no idea when did I buy those thought.

Zucchini were screaming I need to bake them into something gorgeous, but what would it be? I made brownies with zucchini, and muffins, and loaf as well. So it were cookies left. Ok, let’s bake some cookies. I immediately got a picture in my mind: scones-ish cookies, not too sweet, so I can put some jam on the top and have it with coffee or just milk. And, of course, those must be oatmeal cookies!

Oatmeal Zucchini Cookies

  • 1 1/2 cup oatmeal flour
  • 1 1/2 cup soy flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 egg
  • 2 tbsp brown sugar
  • 1/4 cup coconut oil
  • 2 medium ripe banana
  • 1 tsp vanilla essence
  • 1 cup shredded zucchini
  • 2/3 cup chopped walnuts


  1. Put baking paper on baking trays. If you use silicone mats as me, omit it.
  2. Mix oatmeal flour, soy flour, salt, baking soda, cinnamon and nutmeg in a bowl.
  3. In another bowl beat in sugar and egg, add melted coconut oil, mashed bananas, vanilla essence, until well combined.
  4. Add 2 into 1, then add zucchini and walnuts, mix with spatula. Batter is of lightly sticking to the hands consistency.
  5. Using ice cream spoon, take batter and form a ball with your hands. Put it on baking tray and slightly press with spatula.
  6. Bake in preheated to 180C oven for 15-18 minutes, cookies should stay rather soft at center.
  7. Let the cookies cool on wire rack and store in container in fridge.

Isn’t it super simple? All takes like 30 minutes including baking, and here you have delicious and what is most important healthy treat! Breakfast or not, my 16 cookies are going to disappear really fast. I sense it.
